Produced from Encruzado grapes from a vineyard over 40 years old, we decided to revisit the traditional way of winemaking white wines at Casa da Passarella, which led us to the discovery that, in the past, whites were fermented in “curtimenta” (skin contact) – just like the reds. Historical research reinforced our conviction and commitment to this method, the result of which is now in sight.
